The safflower (latin name: Carthamus tinctorius) — is a herbaceous plant of the Cathamus genus, Cynareae tribe, Asteraceae family. It is used as an oil-bearing and dyeing crop. Not much safflower is produced in the world – just about 600 thousand tons. One of the largest safflower manufacturers is Kazakhstan. This country has the most favourable climate and conditions for the safflower cultivation. The safflower seeds and flowers are usually used. The safflower oil is a good alternative to the sunflower oil, it is used in the food industry to produce margarine. Dyes, including the food ones, are made of the safflower flowers. The Safflower is also used in medicine.
